Chicken (Turkey) Pot Pie Freezer Meal

 Hello Everyone! I would like to take a few minutes to introduce myself. My name is Allison and I blog over at Living Frugal (http://www.frugalityexplored.blogspot.com). I started my journey there in the beginning of the summer shortly after my youngest was born in April. My goal in the beginning was to help other mothers and families save money on their groceries. I love writing, so this was a great idea.


With Thanksgiving over I’m sure many of you are wondering what you are going to do with all your left over turkey. This is a recipe that was given to me by one of my friends. I tried it today and it was a super hit with everyone!

Recipe:

1# chicken, cooked and shredded
2 c broth
2 c milk
1 onion, diced
1/4 c butter
1/3 c flour
1 bag frozen veggies
salt and pepper

1 c flour
1 1/2 t baking pwd.
1 c buttermilk
1 stick butter, melted

To assemble:

Melt butter in pan, saute onion until clear. Add flour mix well. Stir in milk, continuously stirring.
Slowly mix in broth. Bring to low boil so it will thicken. When thick and hot stir in veggies and
chicken. Place in ziploc, seal and freeze flat.

In a separate ziploc place flour and baking soda. Double bag with pot pie filling.

To prepare:

Thaw. Pour contents of bag into casserole dish. In a separate bowl, mix the flour mixture with
1 c buttermilk, and the stick of butter until smooth. Pour over filling. Bake in oven at 400 for
30-35 minutes until golden and bubbly.

Additional items needed:

1 stick butter
1 c buttermilk (if you do not have buttermilk, you can put 1 T vinegar or lemon juice in a glass
measuring cup and fill with milk to the 1 c line, works great!)

Serving ideas:
salad, fresh veggies

    A GREAT shortcut is to use 2 cans of cream of whatever soup (usually I use mushroom), frozen veggies, diced up left over meat, salt n pepper to taste and my biscuit recipe for the topping (or canned biscuits if i’m just in a flat out hurry).
