Chicken Soup with a Latin twist

Ingredients

olive oil 1 tsp 1 pt

tomato sauce-
canned ½ cup 0 pt

sofrito- ¼ cup- 3 pt

onion-1 medium sized 2 pt

chicken breast-whole, skinless, boneless& cubed 6 pt

paprika-1 tsp

water-10 cups 0 pt

potatoes-2 cut in large chunks 4 pt

cannellini beans-1 cup 2 pt

whole grain pasta(penne) -4 oz 4 pt

spinach -1 cup 0 pt

salt to taste

pepper to taste

Instructions


Fire up your stove and grab a huge pot-you’re going to need it. On medium heat add in the oil, tomato sauce, sofrito (this is a necessity and will add some serious flavor to your soup), onion, chicken and paprika. Stir it up until the chicken is seared and your marinade looks more like a paste. Turn up the heat and add in the water, potatoes and cannellini beans-cook this up/boil for 30 min. then add in the pasta and spinach and cook for another 15 minutes or until the pasta is ready. Add in salt and pepper to taste.
