Carrot and Ginger Soup

I made this last fall as a hearty soup for my family during the fall. Now I have to be honest I am not a huge carrot fan, but the combination of the carrot and ginger is so soothing and hearty I personally just loved it!! And it could be an awesome soup to use during your Thanksgiving meal! And the best part about this soup is it is inexpensive to make!
